Orach, Sweet Pea, and Apple Salad topped with Hard Boiled Egg and Fresh Spring Herb Bundle

(serves 2-4)

*Orach Leaves

*1/3 lb of sugar snap peas raw (just snap off the top stem before putting whole pea      pod  in salad)

*1 apple cut into small square pieces

*cilantro, Lemon Balm, and bergamot leaves chopped/minced

*2-4 T Olive Oil

*1-3 T Balsamic Vinegar

*Salt and Green Cracked Pepper to taste

*4-8 thinly sliced Cured Salami rounds, torn into pieces (optional)

*2-4 hard Boiled egg, sliced into thin rounds

*3-6 oz Feta Cheese Crumbled

 

To begin with, get your eggs hard boiled. I think the perfect way to boil an egg is to bring water to a boil then add the eggs.  Turn off the heat immediatly and cover.  Leave sitting there from 7-11 minutes depending how firm you like your yolk centers. Drain and then plunge into ice cold water and let sit for a while until you are ready for peeling off the shells.

All the other ingredients above can be put into a large salad bowl and tossed.

Either serve in large serving bowl for everyone to serve themselves or go ahead and place in individual salad bowls.  WHich ever you choose just top with the hard boiled egg round slices.
